Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup pumpkin puree (100% pure, not pie filling)
  • 1 cup whole wheat flour
  • 2 large eggs
  • 1/3 cup neutral oil (canola or vegetable)
  • 1/3 cup maple syrup
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional mix-ins: 1/2 cup walnuts or pecans, 1/2 cup dark chocolate chips, 1/2 cup raisins or cranberries, 2 tablespoons chia seeds

Instructions

  1. Preheat oven to 350°F (175°C).
  2. If desired for a smoother texture, pulse rolled oats in a blender until they resemble coarse flour. Otherwise, leave whole.
  3. In a large mixing bowl, whisk together eggs, pumpkin puree, oil, and maple syrup until smooth.
  4. Add oats (or oat flour), whole wheat flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt to the wet ingredients.
  5. Gently fold the dry ingredients into the wet mixture using a spatula until just combined. Do not overmix. Fold in optional mix-ins if using.
  6. Line a 12-cup muffin tin with liners. Portion batter into each cup, filling about 2/3 full.
  7. Bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  9. Store in an airtight container.

Notes

Do not use instant oats as they will make the muffins gummy. Ensure baking powder is fresh for proper rising. Room temperature ingredients mix more evenly. These freeze well for up to three months.
