A simple, single-serving peach cobbler made with pantry staples like yellow cake mix and canned peaches. This budget-friendly dessert is ready in under 30 minutes and costs approximately $2.50.
Ingredients
- 0.75 cup (90g) Yellow Cake Mix
- 1 can (15 oz / 425g) Canned Peaches in light or heavy syrup
- 2 tbsp (30g) Unsalted Butter
- 1 tbsp (12g) Granulated Sugar
- 0.5 tsp Ground Cinnamon
- A pinch Nutmeg
- 0.5 tsp Vanilla Extract (optional)
- 2–3 tbsp Water or Milk
Instructions
- Preheat oven to 350°F (175°C). Lightly grease an 8-inch baking dish with butter or cooking spray.
- Open the can of peaches and drain most of the syrup, reserving about one tablespoon. Chop peaches into bite-sized pieces if necessary.
- Place peaches in the prepared baking dish. Sprinkle with the reserved peach syrup, cinnamon, and nutmeg. Toss gently to coat.
- In a mixing bowl, combine the yellow cake mix, sugar, and a pinch of salt. Add the melted butter and water (or milk). Whisk until a smooth, thick batter forms.
- Pour the batter over the peaches in the baking dish. Spread gently to cover the fruit. Dollop extra small pieces of butter on top if desired.
- Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the cake part comes out clean.
- Remove from oven and let cool for 5 minutes before serving to allow the filling to thicken.
Notes
Do not drain the peaches completely; keep the tablespoon of syrup for moisture. If the top browns too quickly, cover loosely with foil for the last 10 minutes. Let the cobbler cool for 5-10 minutes before eating to prevent runny filling. For a crispier topping, use cold butter cubes mixed into the dry mix instead of melted butter.
