A lazy, stress-free brunch solution that combines chopped blintzes with a rich cream cheese custard and a tart berry compote. This casserole requires zero rolling skills and delivers a fluffy, soufflé-like texture.
Ingredients
- 12 large crepes or 1 box of thin blintzes
- 16 oz (450g) full-fat cream cheese, room temperature
- 1/2 cup (100g) granulated sugar
- 4 large eggs
- 1 cup (240ml) heavy cream
- 2 tsp vanilla extract
- 2 cups (300g) mixed berries (raspberries, blueberries, blackberries)
- 1/4 cup (50g) sugar (for compote)
Instructions
- Preheat oven to 350°F (175°C). If using frozen blintzes, thaw them completely.
- Stack blintzes and cut into 1-inch wide strips. Place strips evenly in a 9×13 inch baking dish.
- In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, mixing gently. Stir in heavy cream and vanilla extract.
- Pour cheese mixture over blintzes. Press down gently to ensure blintzes are submerged in the liquid.
- Bake for 45-50 minutes until edges are golden and center is set but slightly jiggly. Tent with foil if browning too fast.
- While baking, combine berries and 1/4 cup sugar in a saucepan over medium heat. Cook for 10-15 minutes until berries break down and sauce thickens.
- Remove casserole from oven and let rest for 10 minutes to allow custard to set.
- Slice into squares and serve warm, topped generously with berry compote.
Notes
Ensure cream cheese is room temperature to avoid lumps. Do not cut the casserole immediately after baking; let it rest for 10 minutes to set. The casserole can be assembled up to 24 hours in advance and refrigerated before baking. If baking from cold, add 5-10 minutes to baking time. Leftovers keep in the fridge for up to 3 days but do not freeze well.
