  • 16 oz (450g) full-fat cream cheese, room temperature
  • 1/2 cup (100g) granulated sugar
  • 4 large eggs
  • 1 cup (240ml) heavy cream
  • 2 tsp vanilla extract
  • 2 cups (300g) mixed berries (raspberries, blueberries, blackberries)
  • 1/4 cup (50g) sugar (for compote)

Instructions

  1. Preheat oven to 350°F (175°C). If using frozen blintzes, thaw them completely.
  2. Stack blintzes and cut into 1-inch wide strips. Place strips evenly in a 9×13 inch baking dish.
  3. In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, mixing gently. Stir in heavy cream and vanilla extract.
  4. Pour cheese mixture over blintzes. Press down gently to ensure blintzes are submerged in the liquid.
  5. Bake for 45-50 minutes until edges are golden and center is set but slightly jiggly. Tent with foil if browning too fast.
  6. While baking, combine berries and 1/4 cup sugar in a saucepan over medium heat. Cook for 10-15 minutes until berries break down and sauce thickens.
  7. Remove casserole from oven and let rest for 10 minutes to allow custard to set.
  8. Slice into squares and serve warm, topped generously with berry compote.

Notes

Ensure cream cheese is room temperature to avoid lumps. Do not cut the casserole immediately after baking; let it rest for 10 minutes to set. The casserole can be assembled up to 24 hours in advance and refrigerated before baking. If baking from cold, add 5-10 minutes to baking time. Leftovers keep in the fridge for up to 3 days but do not freeze well.
