  • 2 lbs (900g) beef chuck roast, cut into 1-inch cubes
  • 1 cup (240ml) low-sodium beef broth
  • 1 cup (240g) full-fat sour cream, room temperature
  • 4 oz (115g) brick-style cream cheese, cubed
  • 8 oz (225g) cremini or button mushrooms, sliced
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp Worcestershire sauce (gluten-free)
  • 1 tsp Dijon mustard
  • 1 tbsp cornstarch mixed with 2 tbsp cold water
  • 2 tbsp unsalted butter
  • Salt and black pepper to taste

Instructions

  1. Cut the chuck roast into 1-inch cubes and place them in the slow cooker.
  2. Heat butter in a large skillet over medium heat. Sauté diced onion for 3 minutes until soft.
  3. Add sliced mushrooms and cook for 3-4 minutes until they release water and brown. Add minced garlic in the last 30 seconds.
  4. Transfer the sautéed onions and mushrooms to the slow cooker with the beef.
  5. Add beef broth, Worcestershire sauce, Dijon mustard, salt, and pepper. Stir to combine.
  6. Cover and cook on LOW for 6-8 hours until beef is fork-tender.
  7. In a small bowl, whisk cornstarch with cold water to create a slurry.
  8. Stir the cornstarch slurry, cubed cream cheese, and sour cream into the slow cooker.
  9. Cover and cook on HIGH for 15-20 minutes until the sauce is thickened and smooth.
  10. Taste and adjust seasoning with salt and pepper. Serve over egg noodles, mashed potatoes, or rice.

Notes

Ensure dairy is at room temperature or tempered before adding to prevent curdling. Do not add cornstarch slurry too early, or the sauce may become gelatinous. For best results, cook on low for 6-8 hours. If using raw mushrooms, the sauce may be thinner and require slightly more cornstarch.
