Description
A quick, 20-minute weeknight dinner featuring savory-sweet ground beef in a sticky glaze, served over rice. This budget-friendly meal is kid-approved and customizable for various dietary needs.
Ingredients
Scale
- 1 lb ground beef (80/20 fat ratio)
- 1/4 cup soy sauce (low-sodium preferred)
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1/2 tsp red pepper flakes
- 1 tsp sesame oil
- Jasmine rice (for serving)
- Green onions and toasted sesame seeds (optional toppings)
Instructions
- Cook jasmine rice according to package instructions. Rinse rice before cooking to remove excess starch.
- In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, minced garlic, grated ginger, and red pepper flakes until the sugar is dissolved.
- Heat a large skillet over medium-high heat. Add ground beef and break it up with a wooden spoon. Cook for 4-5 minutes until no longer pink. Drain excess grease if desired, leaving a little for flavor.
- Pour the prepared sauce over the cooked beef. Stir to coat evenly.
- Reduce heat to medium-low and simmer for 2-3 minutes until the sauce thickens and becomes glossy, coating the back of a spoon.
- Remove from heat and drizzle with sesame oil. Stir once more.
- Serve immediately over steamed rice. Top with green onions and toasted sesame seeds if desired.
Notes
Do not crowd the pan to ensure the beef browns rather than steams. Use fresh ginger for best flavor. The sauce can be pre-mixed and stored in the fridge for up to a week. Leftovers store in the fridge for up to 4 days or freeze for up to 3 months (freeze beef separately from rice).
