  • 2 tbsp (30g) Unsalted Butter, melted
  • 2 tbsp Everything Bagel Seasoning (plus extra for topping)
  • 1 tbsp Honey or Barley Malt Syrup (for boiling water)
  • Water for boiling (large pot)

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water and sugar. Sprinkle yeast over the top and stir gently. Let sit for 5-10 minutes until foamy.
  2. Mix the dough: Add salt and melted butter to the yeast mixture. Gradually add flour, mixing until no dry flour remains. The dough should be shaggy and sticky.
  3. Knead the dough: Turn dough onto a lightly floured surface. Knead by hand for 8-10 minutes until smooth and elastic.
  4. First rise: Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for 1 hour or until doubled in size.
  5. Shape the bagels: Punch down dough and divide into 8 equal pieces. Roll each into a 12-inch rope, wrap around fist to form a circle, and pinch ends to seal. Ensure hole is about 1.5 inches wide.
  6. Second rise: Place shaped bagels on a parchment-lined baking sheet. Cover loosely and let rest for 30 minutes until puffy. Preheat oven to 425°F (220°C) and bring a large pot of water to a rolling boil.
  7. Boil the bagels: Carefully drop 2-3 bagels into boiling water. Boil for 30 seconds per side. Remove with a slotted spoon and place back on the baking sheet.
  8. Add toppings and bake: Brush boiled bagels with honey water. Immediately press everything seasoning onto the wet tops. Bake for 20-25 minutes, rotating halfway, until deep golden brown.
  9. Cool and serve: Let cool slightly before slicing and toasting.
