Ingredients

  • 2 cups (450g) full-fat plain Greek yogurt
  • 23 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup (100g) cluster-style granola
  • 2 tablespoons mixed nuts and seeds (chia seeds, hemp hearts, or chopped almonds)
  • 1.5 cups (225g) mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 1 medium banana, sliced

Instructions

  1. Wash and dry the berries. Slice the banana. If using frozen fruit, thaw slightly and pat dry to prevent watery yogurt.
  2. In a medium bowl, combine the Greek yogurt, honey, and vanilla extract. Stir until well combined and taste to adjust sweetness.
  3. In a glass or jar, add a layer of the yogurt mixture (about 1/4 cup) at the bottom.
  4. Sprinkle a layer of granola (2-3 tablespoons) over the yogurt.
  5. Layer the fruit on top of the granola, distributing evenly.
  6. Repeat the layers (yogurt, granola, fruit) two or three times, ending with a final layer of yogurt or fruit.
  7. Top with extra granola, a drizzle of honey, fresh berries, and optional seeds or coconut flakes.
  8. Serve immediately or cover and refrigerate for later.

Notes

For best texture when meal prepping, store granola separately and add it right before eating to keep it crunchy. Use thick, strained Greek yogurt to avoid a soupy consistency. If using frozen fruit, ensure it is thawed and patted dry. This recipe can be made vegan by using coconut yogurt and maple syrup, or gluten-free by using certified GF granola.
