  • 2 large boneless, skinless chicken breasts (approx. 1.5 lbs / 680g)
  • 1.5 lbs Yukon Gold potatoes (cut into 1-inch chunks)
  • 4 tbsp unsalted butter
  • 6 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth
  • 1 tsp dried thyme
  • 2 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Prep the ingredients: Wash and cut potatoes into 1-inch chunks. Mince garlic. Season chicken breasts with salt and pepper on both sides.
  2. Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown. Remove chicken to a plate.
  3. Cook the potatoes: In the same pan, cook potato chunks for 5-6 minutes until softened and slightly golden. Add minced garlic and dried thyme; cook for 1 minute until fragrant.
  4. Create the sauce: Pour in chicken broth and scrape up browned bits from the bottom of the pan. Simmer for 1-2 minutes until slightly reduced.
  5. Combine and finish: Return chicken to the pan, nestling it into potatoes. Add butter. Spoon sauce over chicken. Cover with a lid and simmer on medium-low for 8-10 minutes until chicken reaches 165°F and potatoes are tender.
  6. Rest and serve: Let chicken rest for 5 minutes. Serve with fresh parsley and extra pan sauce.

Notes

Do not overcrowd the pan to ensure proper searing. Use Yukon Gold potatoes for best texture. Rest the chicken for 5 minutes before serving to retain juices. This recipe is naturally gluten-free if using certified GF broth. Can be made ahead by prepping ingredients the night before.
