  • 2 pounds boneless, skinless chicken thighs
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 6 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1.5 pounds red potatoes, cut into 1-inch cubes
  • 1 medium red onion, sliced into wedges
  • 1 tablespoon olive oil (for vegetables)
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken thighs dry and place in a large bowl. Whisk together 1/4 cup olive oil, lemon juice, garlic, oregano, thyme, smoked paprika, salt, and pepper. Pour over chicken and toss to coat. Let sit while prepping vegetables.
  3. Cube potatoes and slice onion. Line a large sheet pan with parchment paper. Spread potatoes and onions on the pan, drizzle with 1 tablespoon olive oil, and season with salt and pepper. Toss to coat.
  4. Place marinated chicken thighs on the sheet pan among the vegetables. Brush with any remaining marinade.
  5. Roast for 15 minutes. Remove pan, flip chicken, and stir potatoes. Return to oven and roast for another 15-20 minutes until chicken reaches 165°F and potatoes are tender.
  6. Remove from oven, sprinkle with feta cheese, and return to oven for 2-3 minutes until feta softens.
  7. Garnish with fresh parsley and serve hot.

Notes

Do not crowd the pan to ensure vegetables roast rather than steam. Use parchment paper for easy cleanup. Chicken thighs are preferred for juiciness; if using breasts, reduce cooking time by 5 minutes. Feta should be added at the end to prevent burning. This dish does not freeze well due to texture changes in potatoes and feta.
