- 3 cups rolled oats
- 1 cup quick oats
- 1 cup natural peanut butter
- 1/2 cup honey
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips
- 1/2 teaspoon sea salt
- Optional: 1/2 cup chopped nuts, 2 tablespoons chia seeds, 2 tablespoons flaxseed meal, 1/2 cup raisins or dried cranberries, 2-3 scoops protein powder
Instructions
- Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large mixing bowl, combine the rolled oats, quick oats, and sea salt. Stir to distribute the salt evenly.
- In a microwave-safe bowl or saucepan, combine the peanut butter and honey. Microwave for 15-20 seconds if cold to soften, then stir until smooth and glossy.
- Pour the warm peanut butter and honey mixture over the oats. Add the vanilla extract and stir vigorously until every oat is coated and the mixture is cohesive.
- Transfer the mixture to the prepared pan. Press down firmly and evenly using the back of a spoon or a flat-bottomed glass to ensure the bars hold together.
- Sprinkle chocolate chips or other optional mix-ins over the top and press them gently into the surface.
- Refrigerate for at least 30 minutes to allow the bars to set and firm up.
- Lift the bars out of the pan using the parchment paper overhang. Cut into 12 squares using a sharp knife.
- Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.
Notes
Use natural peanut butter for best flavor and texture. Press the mixture firmly into the pan to prevent crumbling. Do not skip the chilling step. If the mixture is too sticky, add more oats; if too dry, add more honey. Toasting oats before mixing adds extra crunch.
